I am new to Observable, just finished making a notebook in Observable and published it, but the markdown code is still visible, and it gets in the way of this.

If I understand you correctly, then all you’d need to do is ‘unpin’ the cell by clicking off the blue pin icon to the left:
And for good measure, I found your notebook (which was interesting, thank you), and unpinned a number of Markdown cells to get you started:
